What is Hui Hui Chicken?

Hui Hui Chicken is a popular Chinese dish that’s been around for more than a hundred years. It’s made with chicken, cabbage, etc., and it has a sweet and sour flavor.

Ingredients

  • 1 lb boneless,bite-sized skinless chicken thighs
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground Sichuan peppercorns
  • 1 teaspoon chili flakes
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 green onions, sliced
  • 1 tablespoon sesame oil

Instructions

  1. In a bowl, mix the cornstarch, soy sauce, Shaoxing wine, sugar, salt, cumin, Sichuan peppercorns, and chili flakes. Add the chicken pieces and toss to coat. Let marinate for at least 30 minutes.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the minced garlic and ginger and stir-fry for a few seconds until fragrant.
  3. Add the marinated chicken pieces and stir-fry for 5-7 minutes until cooked through and browned.
  4. Add the sliced bell peppers and green onions and stir-fry for another 2-3 minutes until slightly softened.
  5. Drizzle with sesame oil and give it a final stir.
  6. Serve hot with steamed rice.

Tips

  1. You can substitute with black peppercorns if you can’t find Sichuan peppercorns.
  2. Adjust the amount of chili flakes to your desired level of spiciness.
  3. Make sure to cut the chicken into bite-sized pieces so that they cook evenly.
  4. Don’t overcook the vegetables. They should be slightly softened but still have a bit of crunch.
  5. For an extra flavor boost, you can add a splash of dark soy sauce or oyster sauce at the end of cooking.

FAQ

How long should you let the chicken marinate?

You should marinate chicken for at least 2 hours, but the longer you let it sit, the better. The acidity of the marinade will help break down some of the tough fibers in your meat, making it easier to chew when you eat it.
We recommend letting the chicken marinate overnight for the best results.

Final Thoughts

Hui hui chicken is one of my favorite chicken recipes because it is so simple to make but tastes great. Unlike many other recipes, cornstarch and baking soda make this a crispy and chewy chicken with very little oil. This is why I love it.
